Throwback Thursday- Lino Turns The Big 2-0!

20 years ago at 9:45 AM today my boyfriend took his very first breath! 

This was taken at his first birthday!

It's so hard to believe that we are both 20. It still feels like sometimes we are still in high school not caring about life.  We have been through 3 birthdays together and I hope we spend many more together. 

He was born in Austin, Texas lived in Mexico for a few years. Then moved back to the Buda/Austin area. At one point he was living in a house with more or less 25 people. He is the oldest among 4 children. He has a black belt in Karate.

This was taken by PKC Karate. He's on a 20-30 foot cliff.

We both went to the same Elementary school (Tom Green), the same middle school (Barton), and of course the same high school (Jack C. Hays). This amazing guy is my best friend and my world.

Munchie Monday- Cheesecake Minis

Thursday is my amazing boyfriends 20th birthday and he LOVE cheesecake! I am making these cheesecake in cupcake tins for a special dessert for his birthday. 

For the crust:

1 cup graham cracker crumbs

2 Tablespoon sugar

3 Tablespoon butter

For the filling:

3 (8-oz.) pkg. cream cheese, softened

¾ cup sugar

1 Teaspoon vanilla

3 Eggs

For the topping:

1 cup whipping cream

Strawberry preserves

Directions:

1. Heat oven to 325°F (162°C)

2. Melt butter in a sauce pan. Mix graham cracker crumbs 2 Tbsp sugar and melted butter together: press in the bottoms of 18 lined cupcake tins.

3. Beat cream cheese, sugar  and vanilla until blended. Add eggs, 1 at a time, mixing on low speed after each addition.

4. Spoon filling in each cup. Bake 25 minutes or until enters are almost set. Let cool and refrigerate 2 hours.

5. Beat whipping cream until stiff peaks form spoon on top of cheesecake. I topped about half this way then I add a spoonful or two of the strawberry preserves and beat again till blended and topped on a few more cheesecakes.

Theses taste so good! They are nice and moist. I love them!

Random Friday- Random Facts

Hi everybody! I thought I would do a kind of get-to-know-me post. I will give yall 20 random fact about me.

My tattoo about an hour after I got it.

1. My full name is Marguerita Victoria Hernandez. Marguerita is pronounced margarita like the drink LOL.

2. About two days after I turned 18 I got a tattoo on my wrist it says 'Amor' which means love in Spanish.

3. I am half Mexican.

4. I know like 30 words in Spanish.

5. I was in band in middle school and played the flute.

6. I was in choir in middle and high school.

7. In high school I was in Marine Corps Junior Reserve Officer Training Corps for all four years.

8. I broke my arm just below my shoulder when I was 12

9. I was a cheerleader in middle school.

10. I wanted to join the US Army but I hurt my back when I was 17 bad enough that I wouldn't be able to join. :/

11. In high school I took a Veterinary Assistant class but didn't have the money to take the test to make it official. 

12. I have 2 half sisters and 1 full brother

13. I have never played in real snow. In central Texas the "snow" we have is not the same as snow in like Colorado or places like that.

14. My first solid food as a baby was watermelon and it's now one of my favorite foods.

15. In 1998 I almost lost my house due to a flood in central Texas. I also missed like a week of school because we couldn't get out of the property.

16. I can shoot a gun but I am the WORST shot ever!

17. The first car I drove legally was a standard 1998 Ford Ranger that later caught on fire on my way to school my junior year...NOT a fun day :(

18. My favorite Disney movie is currently Tangled. That's right I'm 20 and love Tangled!

19. I am 4 months and 3 weeks older then my boyfriend.

20. It took me just two weeks to fall in love with my amazing boyfriend.

Throwback Thursday- Sarah Turns Two! Plus Changes.

Yesterday we celebrated  two years of owning my little dog Sarah. We found her wondering the street in Buda one night and she came running to me and brought her home and no one ever claimed her. She is the greatest dog I have owned in a long time. She is full of energy and loves to play with tennis balls and squeaky toys. She has grown some not to much since I got her, she has though gotten longer hair.

The picture above I love even though it's blurry because it shows her true self which it sometimes a blur LOL! Living in Texas we try to take her to the river as often as we can because it gets hot and she loves to talk to people. Sarah doesn't really like to swim but she will walk into like belly deep water and stand there. Sarah is just a great dog and I think if we didn't spay her she would be a great mom but I have a lot of dog and I believe in spaying and neutering, instead of breeding. 

When I first got her, her hair was SO short!

Two things that I really hope that yall take away from this is to spay and neuter your pets and to adopt from a animal shelter. I have decided to changes things up a bit on the blog. I will be doing Throwback Thursday every other week and I will be adding a new "series" called, wait for it....Thirsty Thursday! It will be non-alcoholic drink "series" because I'm only 20 and legally can't drink. I already have a few drinks planned, so stick around to make some yummy drinks!
